Application of response surface methodology for studying the quality characteristics of cowpea-fortified nixtamalized maize
NationallizenzElsevier | 2002|Schlagwörter: Industrial relevance: Alkaline cooking of maize (Nixtamalization) is the first step in the production of maize dough and resultant products such as tortillas, tacos, corn and tortilla chips. The alkaline (calcium, hydroxide) treatment has been shown to improve nutritional quality. However, cereal based foods have low protein concentrations and fortification with cowpea has been shown to lead to improvement of total protein quality and quantity. This study aimed to collect quantitative data on cowpea-fortified nixtamalized maize. Interestingly, cowpea-fortification in conjuction with fermentation resulted in overall improvement of chemical and functional qualities of traditional (African) foods made from maize. -
