Effect of preheating on thermal degradation kinetics of carrot texture

Various steps for control have been exploited (e.g. low temperature blanching) or suggested (e.g. preheating). However, for the latter systematic studies on process kinetics have been missing so far. The data show a clear relationship between preheating and texture improvement with preheating temperatures from 60 to 70 °C for 30 to 40 min resulting in the lowest rate constants for thermal texture degradation at final processing temperatures between 80 and 100 °C. -
